Thanks for your question. You wouldn't build a folder, per se - but a Canvas assignment would do the trick!

There are several options, once you build an assignment. Most likely you're looking to build an online assignment. There are several "online entry options" for you to choose from. For example if you want them to upload a document, then you would select "file uploads."
By creating an online submission Canvas assignment, it creates the space for them to upload their submissions and also creates a column in the gradebook.
