We had a quiz on Friday. Our professor gives everyone different versions so there is no cheating, it is a pdf quiz that we upload when done. I’m in the morning class so I did it and turned it in. Something went wrong with the afternoon class so the teacher gave us all the same version of the test and told us we can submit it on Monday. The version she wanted everyone to do was my original version, so I didn’t have to redo it but she encouraged us to so we can double check our work. I was planning on redoing it over the weekend, but my TA graded my original submission before I could turn in the new one. I turned in my new submission regardless,. Will Carmen tell him there is a new submission to grade?

I know that a few school's refer to their Canvas environment as "Carmen", so I can only assume the same for you and your school. To answer your question, though... yes, when you submit an assignment/quiz in your Canvas course, your instructor (and possibly TA/Teaching Assistant) will be able to access the additional submission(s) via the course SpeedGrader (which is something students do not have access to). They can see all submissions for a given assignment...which are all time/date stamped.
