Welcome to the Canvas Community!
This depends on how your instance of Canvas gets students into courses. If they are enrolled in Courses via SIS imports, then the SIS would need to be updated to remove them from the courses. If they are manually added to courses, and you have the permissions, you can remove them from the courses via the People tab.
