Is there a way to log communication made with students either verbal, email, phone, etc.? One idea we had was to have a “Communications” and/or “Notes” tabs for each student under the People tab (and maybe other places) where you could log any type of communication (including phone) like a submitted comment. Then you could see the time/date stamp, what was said, action, next steps, etc. That way, all of this information would be in one platform for easy reference.

I don't know that anything like this exists in Canvas.  However, you might be able to use the "Notes" column in the Gradebook to accomplish something similar to what you want...though it might not be time/date stamped.  Here's more information for you to look at: How do I use the Notes column in the Gradebook?.  Do you think this might be a workable solution for your needs?
