Course end date is defaulting to 2026 and has no time setting on calendar

I am trying to set a course end date to allow a student to turn in something late. I have access to change the date, but every time I do it defaults back to a specific but random future date in 2026.

Picture 1 : pasted date with desired time (note no time fields at bottom of open date window as is shown in instructor resources  / FAQ)

Picture 2: click off field (whether to hit Update Course Details button or another field) and date changes to Jan 1, 2026 at midnight. Will not hold another date nor time to allow it to be saved..

@thomas_walker1  I apologize that no one has responded to your question before now! This looks troublesome and decidedly weird. Do you have a moment to share how this was ultimately resolved?

It wasn't directly. I just left it with the excessively long end date and at the end of the year (July 1st) it was unpublished as part of the normal rotation of courses as set by my school district.
