If you are a Canvas administrator for your school, you can create a sandbox course by following this Guide: How do I add a course in an account as an admin?. You can name the sandbox course whatever you want (for example, when we give a faculty member a sandbox course, we just put that person's name in the course title). Then, you can enroll that person in the course with the Teacher role: How do I add users to a course?.
