Create new courses, what to do about the SIS IDs?

I'm wondering what others do with their SIS IDs year-over-year with cloned courses. We are only in year 2 of Canvas and coming up against something we hadn't thought through.

Consider:

AP Biology occurs every year. In the 2019-2020 school year, its SIS ID was 03-BIOL-218. We matched this SIS ID to our SIS in order to generate transcripts.

This year, we copied over all the content to create an AP Biology for 2020-2021. Its SIS ID is 03-BIOL-305. However, when we go to match the grades from this course in our SIS, we'll have to create a new course in the SIS too, right? IDEALLY, we want the SIS to show only one course, "AP Biology". Then we could show everyone who has ever taken that course, and their associated grades.

Matching up last year's course in the SIS with this year's new Canvas course would mean some switching around of SIS IDs, and that makes me feel queasy. Do you all maintain new courses each year in your SIS? Doesn't that make for some messy data and reporting functionality? Or do you try to maintain consistency in the SIS, keeping the same SIS ID year-over-year and retiring last year's Canvas SIS ID (eg we could make last year's AP Bio ID "RETIRED-03-BIOL-218" and give this year's AP Bio the "03-BIOL-218" ID, carrying it over each year.

Thanks for your wisdom!
