How do I take a previously saved PDF or other document in my Google Drive and allow students to write on it to submit rather than having students print it and then submit it?

Sorry to see that this question has been sitting out here unanswered for such a long time. If you have the Google Apps LTI external tool app integrated in Canvas (check with your school's local Canvas administrator or someone from your school's Online Learning/eLearning department if you are not sure), then you could set this up as a Google Cloud assignment where they are able to essentially create a copy of your document which is saved to their own Google account...and they can could make edits to it before they submit it to you via Canvas.
