Eliminating the preview feature in a google doc assignment

Very new to Canvas. 3rd grade teacher.

I am trying to use a pre-created google doc as an assignment. I have two questions:

How do I make a copy for each student so each student can edit it individually? I've attempted this a few times, and have come up with another question.

How do I eliminate the "preview" that appears on the screen when they open the assignment? The link appears for them to open the document, but as soon as the kids touch the preview, it alters the google doc.
