You edit the assignment and change the due date. You can also drag the assignment on the calendar to change the due date.
One thing to watch out for is the availability dates. If you have them set and move the due date, you may need to adjust them. At one time, I haven't checked recently, dragging dates on a calendar did not change the availability dates, on the due dates.
You can change the due dates for the entire course, a section of the course, or individual students. Here are some lessons from the Canvas Instructor Guide.

If you're teaching a course that is a blueprint course, you may not be able to change the dates as they can be locked in the master course. In this case, you may have to talk to the person in charge of the course.
