Hi  @lgoodall ‌, welcome to the community!

One of the best parts of Canvas is that gradebook columns are automatically populated when you create gradeable content (quizzes, discussions, assignments, etc.) - meaning you don't have to do the work twice.

How do I create an assignment? 

As to the question about percentages, I'm assuming you mean categories for weighting, e.g. homework is 30%, tests are 50%, etc.  For that you'll use Assignment Groups: https://community.canvaslms.com/docs/DOC-9880-4152232976
