You didn't mention what device you're using - phone, tablet, computer, or what OS or what browser. If you include a screenshot of what you're seeing we'll be able to give you better advice.
But just considering the date, are you sure you still have access to submit things in your course? UCF FAll 2019 Calendar. Your school may have the settings to leave the course open for read-only access for students after the end of the term. So while you can see there's a quiz or assignment there, you cannot "interact" (as in submit or take quiz) with the content.
Contact your instructor (by email or through Canvas) to find out more information about the submitting work after the end of the term. But seems to me the grades were due yesterday Monday Dec 16 and tomorrow Wed Dec 18 the grades will be posted.
