@lleverhart , greetings! I'm not totally sure I understand your question, but to view the Insights for a video you would either need to be in the course where the students would have watched the video OR you would need to go to the main Studio page (on the far left in your global navigation in Canvas) and look for the video there. Once you find the video from the main Studio page, you can click on Insights and then where it says "My Uploads," click on this and select the course you would like to see the Insights for. Insights will show for each individual course that the video has been used.
