I tried to post a video to my class, and it'a been giving me this for the past 24 hours:
Media is currently being converted, please try again in a little bit.

Minimize embedded content

My professor said I would not get penalized for lateness and to please contact you for advice.

Sorry to see that you are having issues with posting a video to your course.  We here in the Canvas Community don't have access to your school's Canvas environment or your course in question to be able to help troubleshoot this issue very well.  So, you may want to reach out to the folks at the Canvas Help Desk directly...as they would be able to log into your school's Canvas environment to see if they can see anything unusual or to help you try and re-upload that video to your course.  You can reach out to the Help Desk staff by following the information in this Guide: How do I get help with Canvas as a student?‌  I hope this resource will be helpful to you, Lila.  Good luck!

It is now 2021 and I encountered this problem again.

What made it worse in my case are

1) I am not trying to upload a media file. I couldn't open or download a student submission to mark it; 

2) I reported the problem and got a reply through email that "Canvas Support has seen such a large increase in volume that we are no longer able to provide support for all Free For Teacher help requests." https://community.canvaslms.com/t5/Instructor/Media-is-currently-being-converted-please-try-again-in...

What do I do now?
