How do I change my name in Canvas? (I had previously legally changed my name and it has been updated with my school system but apparently not updated in Canvas)

This would depend on how your institution integrates information from the official student or HR system into Canvas (if you're a teacher or staff member). Our institution doesn't automatically change names via the means that created user accounts in the first place. You should contact your school help desk or IT support to see if they can make it match what it should be in the official school system you referenced in your question.
If your institution allows for you to change your display name, you could at least get that far.
