Yes, you as the instructor should be able to view all submissions of the quiz from your student(s)...no matter what date/time it was submitted to you. Please check out this Guide: How do I view the details of a submission for a student in SpeedGrader?. Specifically, look at the section called "Evaluate Multiple Submissions". Instructors always have access to all submissions for a given student. However, students can only see their most recent submission for assignments.
