If the process involves a student submission, you will need to duplicate the assignment for each time it reoccurs. This lesson in the Canvas Instructor Guide explains how: https://community.canvaslms.com/docs/DOC-11793-how-do-i-duplicate-an-assignment
If you are manually entering the grade, some people create a rubric with one criteria for each time and then mark it there.
