Is it possible to create a rubric without points attached?

Yes, you can do this.  If you look at this Guide, How do I add a rubric to an assignment? - Canvas Community, the section on "Find a Rubric" has a screen shot with a check-box for "Remove point from rubric".  When you build your rubric values, you still need to put a point value in (example: Yes = 1 point, No = 0 points), but after you check that box, it will just show "Yes" and "No"...and then you can even "Display Grade as" to indicate the assignment would be "Complete/Incomplete" instead of assigning it points based on the rubric.
