I have students who, sometimes, have to stop in the middle and leave. When they try to finish up, later, it makes them start from the beginning. How do i fix it to where it allows them to start where they ended?

Unfortunately, I am not aware that this kind of functionality exists for Canvas Studio videos.  The best advice I could offer is that your students will have to use the controls on the video to scrub through the video's timeline to get to the point they need to.  I know...not ideal...but it's the best I can think of.

You might want to submit this as a new Feature Idea.  From any page here in the Community, go to "PRODUCT" >> "IDEA CONVERSATIONS".  Then, click on the red "Suggest an idea".
