Depending on how your instance of Canvas is setup and the permissions you have will determine whether or not you can create a new course yourself. If you have the correct permissions to create a course then this document (https://community.canvaslms.com/docs/DOC-10766-421455347 ) will walk you through creating a new course. If you have this correct permissions then you will need to reach out to your institutions Canvas Admin and ask for them to create you a test course and enroll you into it as the teacher.
