Super easy! No matter if you are on your "Modules", "Discussions", "Pages", "Quizzes", or "Assignments" index pages, you will see a green check-mark next to any items that are considered "published". Just click on that check-mark to make them un-published. Here is one Guide that explains how un-published pages are in a "draft" state: How do I use Draft State in Pages?.
