If we have students use the Canvas App, and they attach a video from their phone, does it actually work? When I test it, it just hangs up on "processing media". Even when I check canvas from my computer, it doesn't process the video. What's the deal here?

What size file are you practicing submitting? Sometimes large files get stuck.
When working with students, I generally recommend hosting the video in cloud-based storage like Google Drive and then submitting the URL. It's much more reliable, and the processing seems to be quicker. Also, depending on how many videos students submit throughout a term, their storage quota could fill up quickly.
