Use of Grade Override with Grading Periods

We are interested in using the grade override feature for a grading period (first trimester) but the documentation says that overridden grades don't impact other course total. Shouldn't I be able to override a grade in any grading period and have the overridden grade be used to determine the overall course total grade? Does anyone have any helpful workarounds that minimize the need to manually compute the course total grade? Alternatively, is there a way to turn off the student view of "all grading periods" so that they can only see their grade for each trimester/grading period? Ultimately, we want to minimize confusion that students will have in seeing different grades in the trimester vs total course grade. TIA
