Can I get my students to upload a video into CANVAS as an assessment??

Hello  @justin_cotton  Welcome to the Canvas Community.  Thanks for posting your question.

Absolutely!  First, check out this Guide: How do I create an online assignment?.  You'll want to choose the "Media Recordings" option so that your students have a place to either record (online) their video or upload the video that they've recorded offline.  From a student perspective, this Guide will be helpful: How do I submit a media file as an assignment submission?.
