If you disable "Grades" from the course navigation menu you are removing that link from the students view so they wont have the option to click on "Grades" from their course navigation menu.
You would use the "hide" grades in the Gradebook when you want to hide grades from students. Example would be if they turn in an essay and you want to "hide" grades from all students until you have graded and posted grades for all students then you can make the grades available to students all at once.

OK - thanks so much. How can a teacher hide all grades from students? Even those that were already posted?
