Why can a student submit on an imported assignment that closed last quarter, but I can't edit it?

I copied a module over from last quarter and forgot it would get copied over as published. A super studious student happened to see them pop up on her To-Do list and she submitted two assignments before I realized what I had done. I have done enough research to know that I cannot unpublish these assignments now that she has submitted. However, I do not understand why she was able to submit at all. The due dates are from last quarter AND the close date is last quarter. If I try to change anything--even deleting the content so the students at least don't get confused by reading it--I get a message saying "Some settings have been disabled because the assignment is in a closed grading period." 

I have gone into files and deleted everything I could associated with the two assignments. However, everything that was typed cannot be changed. Can someone please pull a miracle out of your back pocket and say you have a solution? Because I'm ready to kick my computer.

I did a Google Search for your error message. It sounds like you need to talk to someone at your school with administrative privileges in Canvas to edit or remove the imported assignments.  They also should be told that the student was able to complete it despite the grading period having ended.  They may not have the student permissions set incorrectly, or it may just be a quirk in Canvas that they should know about.
