I would like to create a 'fake' student with a perfect score on all assignments, exams, attendance, etc. in order to ensure my calculations/weights of grades are correct (i.e., he/she gets 100%). how do i do that?
You can use the Test student. Click on your course settings and then "Student View." This will generate a "test student." You can then go into speedgrader or the gradebook and enter in grades for this student. These grades will "stick" until you reset the test student.
