I had to search the Googles to see what an "exit ticket" was...because that's not any terminology that Canvas has (or that I know of, at least). It looks like "exit tickets" are simply ways to collect information from people (for example, a short end of lesson questionnaire related to the topic). You might consider using Canvas Quizzes for this...specifically the survey portion of Quizzes.
The kinda strange thing about surveys is that you still have to specify a "correct" answer when setting up any objective-type questions (multiple choice, true/false, etc.) ... even if there is no real "correct" answer.
