On one Page in Canvas I created three videos of varying lengths. The longest one was about 30 minutes. When I click on the videos they say "Media is currently being converted, please try again in a little bit." It's been like this for a few hours. Does it take that long? Should I expect to have just lost those videos? Can anyone help?

It normally doesn't take that long but given how busy I'm sure Canvas and their media system is right now, I would not be surprised to see things taking longer than usual. Lots of schools are out right now with professors getting ready to go online. My guess is that there are lots and lots of videos being uploaded causing a queue for them to get processed.

I encountered a similar problem.
What made it worse in my case are
1) I am not trying to upload a media file. I couldn't open or download a student submission to mark it;
2) I reported the problem and got a reply through email that "Canvas Support has seen such a large increase in volume that we are no longer able to provide support for all Free For Teacher help requests." https://community.canvaslms.com/t5/Instructor/Media-is-currently-being-converted-please-try-again-in...
