It sounds like when you assigned to the single student, the access to everyone was removed.

Here are the steps that hopefully resolve this:

1. Open Quiz
2. Scroll down to Assign Access
3. Click + Assign To
4. Add the student name and due date for that student
5. Make sure the top Assign To section is listed as everyone else.
