I don't think DocViewer has anything to do with it. We don't use it, and we have the same issue. Could it be related to the new student feedback visibility update (Canvas Release 2022-12-17) ?

it sounds like the different roles and permissions were getting crossed. i just wanted to add to this some bits of information I have discovered over time.
I know that it is recommended by Canvas support that if a user is an admin, Student, TA, and/or Teacher that they have separate accounts setup for any of those roles and permissions. Since the admin role has a higher permission set, Canvas will do it's best to sort out what they should be able to do and see. However those roles can sometimes clash, causing issues such as this.
Most schools will setup an account for a users admin permissions, an account for testing student/teacher related stuff, and even sometimes an entirely different account that is strictly a teacher role. (This is not always necessary since a user can have a student and teacher role with one account)
Separating the different users accounts (Admin/student/teacher) ensures that those roles are only showing them things that pertain to that role's permission set.
