Respectfully, why doesn't Instructure try creating several courses within their own instance of Canvas and re-create the problem and troubleshoot it internally? This is such an easily replicable problem. It's clear that this problem is impacting multiple users and multiple institutions. The suggestion to "try clearing your browse" is not helpful given a problem of this scale and severity.

This would be so helpful. As I have different point values for different assessments (Test vs Labs vs Homework). I want to make sure that I grade specific categories more frequently and completely, this would be awesome.

A great suggestion! However, what you'll want to do is post that as a Feature Idea here in the Community. You can start this process by clicking on the PRODUCT menu from any screen here in the Community, and then selecting IDEA CONVERSATIONS. Then, click on the "Suggest an idea" button. You'll be prompted to input some keywords or a title of your idea...and it may find something that already exists. If this is the case, add your comments to the existing idea instead of creating a new one. But, if you cannot find anything that matches, go ahead and create a new Feature Idea. I like a weekly overview page too in the Modules, but I also have a scrolling homepage that offers a looser overview of what's coming up that the students have to slap their eyes on when they log in. What they see is the most recent week's overview, and maybe some feedback about an assignment for the class as a whole or shout-outs. Students can scroll down if they'd like to review earlier week's overviews. It's like using Announcements as a Homepage, but I just build on the same page each week. I find it works really well because it's a little creative, personal, and students discover a different image and message each week. Here's a snip/sample from last spring:
