Hello jrthompson...  @jlm525  is correct that cross-listing two courses together should ultimately done before the classes actually start.  Cross-listing courses only moves enrollments from one course to another...so that students from both courses are logging into one course.  From an instructor's point of view, he/she can see the students via the "People" tab separate out by each course.  In addition to the link that Jamey provided to you, there is also a Guide here in the Community that would be of help: How do I cross-list a section in a course as an instructor?‌ If you are not able to cross-list two courses on your own, you will need to reach out to your school's local Canvas administrator or someone from your school's Online Learning/eLearning department who could do this for you...keeping in mind the things we've mentioned above and the information in the blue box of the link I provided.
