I would like to add a picture as part of a multiple choice question or fill in the blank question on a quiz in canvas, but I cannot seem to figure out how to do that. Any ideas?
Heather, anywhere the Rich Content Editor (RCE) appears in Canvas, you can add an image using the Content Selector panel on the right side of the screen. To do that, you'll need to click the edit pencil for the item in question (for multiple choice questions, the RCE is available both in the body of the question and in the answer choices, whereas for fill-in-the-blank questions, you can insert images into the question body, but not into the possible answer choices).

If you're referring to adding images into the question on a multiple choice quiz, then Stefanie's response above will show you how to do it. The rich text editor will give you great options to either upload your own images, or to search flickr.
If you're trying to add pictures as part of the answers to the multiple choice quiz (such as a question "which of the below is by michaelangelo" with 4 images as answers A-D), then that is not currently available. There's been some discussion about whether this would be part of the new quiz engine that will be out sometime soon (but more than 6 months from now).
Heather and Anthony, you might be interested in knowing that you can insert images into the answer choices of multiple choice questions by clicking on the Edit pencil next to the multiple choice answer to reveal the RCE for that answer. So Anthony, you could indeed create the question "Which of the below is by Michelangelo" followed by an array of four images as the possible answer choices. This is the case as long as you are creating the quiz questions in the quiz itself--not in a question bank, where the procedure is slightly different, and which is why I prefer to create my questions in quizzes first, then organize them into question banks.
Having said that, some questions do not have full RCE capability, and the aforementioned The specified item was not found. project may well address that.
