On my list of 'courses' the INTRODUCTION to TEACHING with CANVAS is listed and is published.
How may I 'unpublish' that and remove it from my list of 'courses'???

I think there are a couple Canvas Guides that would help you here. First, the Guide How do I publish a course? discusses publishing your course and unpublishing your course. Near the very bottom of this Guide is the following:
Note: You can unpublish your course by clicking the Unpublish button in the Course Home Page sidebar. However, once your course contains a graded submission, you can no longer unpublish your course.
Next, you can also customize your course list to have courses you "favorite" show up in your course listing. You can find out more about how to do this by using this Guide: How do I customize my Courses list?
The only other thing I can think of is that if you wanted to be completely removed from the course, someone who is the admin for your school's Canvas instance could remove you from the course...and that would remove it from your course listings entirely. Of course, I'm not sure if this is what you'd want (if you ever needed to look at it again, for example).

How do I unpublish the 'training' course that CANVAS created "INTRODUCTION to TEACHING with CANVAS" ???

If you are not an instructor in that particular course (meaning that you're essentially enrolled in the "training" course as a "Student"), then there is no way that you'll be able to unpublish that course. Typically, that is only a function for roles that have more editing rights (Teachers, TAs, Admins, etc.) have the ability to do. You'd have to use the Guide I linked for you to customize your course list....or ask to be completely removed from the training course altogether. Hope this helps.
