I'm having trouble imaging how to organize my Canvas for my elementary students. I currently have a course for each subject, but I heard I should develop modules too? This is overwhelming!

Having multiple courses is going to be different depending on what you're teaching. For example, if you're a homeroom teacher, say 4th grade, you might want just 1 course. But if you're a specials teacher (e.g. Art) you might want a course for each class of students (3rd Art, 4th Art, 5th Art).
Within the course you don't need to have modules, but they will likely be extremely helpful for both you and your students to conceptualize the course and add some logic/structure to it. I would say that most people structure their modules one of two ways: week-by-week or by unit/topic. Personally, I used unit/topic when I taught because I didn't have to move stuff around if we got off-schedule, but I know a number of teachers that used a module for each week of their course.
Within the module you simply add the resources and activities that you will be covering (either that week or within that unit). Personally, I kept my unit guides in the module, and unpublished so the students couldn't see it, but I could.
