I am familiar with production, test, and beta domains however I am not sure what staging is used for. Anyone?

The staging server is something that our engineers use to performance test issues and changes before applying them to production - think pre-beta environment. Your instance of Canvas is not associated with Staging in any way. If support or engineering needs to you to help test something in staging they will let you know. This almost never happens but if it is the case, we'll let you know.
Jeff, we've been using Canvas since 2012-2013 and I've never heard of this. Can I ask in what context you heard about it? Regardless, I'm going to share this with the Canvas Admins & Canvas Developers groups to see if they can help.
The availability of this was mentioned during a session this morning. We were discussing API's and where to test. It was in this context that the test instance and then staging was brought up.

It was mentioned in my session as well (I've been in Canvas since 2012, and this was the first I had heard of it as well). Apparently it is a place where the engineer/support people work and do more, what I would call 'dangerous' things (I get this from the person in my session saying that it is often broken, because they are pushing its limits more).
