I've uploaded content from a past LMS and now I have 100+ individual files with odd numerical names filling up the course files of my course. What is the best way to manage that, fast and easily?

I assume these are all in your FILES area in Canvas, correct? First, be aware that you MAY be breaking internal links to those files elsewhere within the imported course site. You may want to check a few areas that link to those files first.
If that's not an issue, the next step depends on what your definition of "fast and easily" may be! The steps I outline below will:
-Export all of the files into a ZIP file, which you will save to your hard drive on your computer;
-Downloading a file renamer program to do a bulk renaming of the files;
-Putting the renamed files back into Canvas, after deleting the ones that are present in the FILES area so that you have your newly-renamed files available in FILES.
First, you have to select all of the files in the files area first to export them. You can do this by clicking on any one file to select it, and then pressing CTRL-A (Command-A on a Mac). All of the files should have a kind of selection bar icon to the left of their file name. Once you have selected them, click the icon noted on the screen capture below to export them all as a ZIP file:
Save that zip file somewhere on your computer. The reason for this is the next step, which is doing some sort of a bulk re-name. First, of course, you want to extract the zipped up files to a directory on your computer. Then you have to rename them. Fortunately, many free shareware software programs out there allow you to do a bulk file rename, including the ability to (for example) remove the first xx characters in a long listing of file names or even to spot numbers within a file name. One that I have used myself is the simply-named ReNamer which is available here:

I highly recommend you play around with this program first on some files you don't care about renaming, since some may find it a bit tricky to learn. But I, personally, love it. If you are a Mac user, there may be similar programs out there. (And, frankly, once you use a program like this you will wonder how you got by without one!)
Once you have renamed the files to your satisfaction, you can delete the older ones in your course site and then re-upload them. If you're comfortable zipping them all back up again, so much the better since Canvas will offer to automatically extract the zip folder when you try importing one.
