When I want students to take a quiz, all of their past closed quizzes still show. How do you get them to stop showing up?
Also, why do some of my quizzes that should be closed still say available? The end date was 9/8/16

First, by "showing up," I assume you mean just simply appearing on the Quizzes "landing page," as opposed to actually being able to see the questions/answers, etc. within the quizzes themselves--which is an entirely different issue. (And I also assume you are speaking of quizzes conducted online.) All assignments--old and new--are always going to appear for students in Canvas by default. That is, after all, how students know what their grades are. Anything "published" will be seen by students. (And before you think that unpublishing them is the answer--it's not, because anything with student submissions cannot be unpublished.)
But if you are annoyed by them seeing them still, I have one suggestion. HIDE the Quizzes menu item altogether. (See this: How do I reorder and hide Course Navigation links? ) The reason you can do this is because, by default graded, online quizzes will ALSO appear on the Assignments page. Next, head to Student View. (What is Student View? ) Head to your Assignments page, and you will see that students see the Assignments (and your quizzes) under the headings of Overdue, Upcoming, and Past. While students can change that view by clicking the Type button in the upper-right corner, few will.
Does that help at all?
Also, regarding the quiz that still says it's available, double-check that in Student View as well just to be sure. If it's still available, check over some of the other settings.
