Can I add a link to my email to the help menu as a Canvas admin?

If you are asking if you can add an e-mail address as a "custom link" to your help menu, then the answer is yes! All you would need to do when clicking "+ Link" is put the following:
mailto:email@example.com (obviously put in a valid e-mail address here)
You could even take it a step or two further and have the subject line and/or body of the e-mail pre-populated with text...such as this:
mailto:firstname.lastname@example.org?subject=Email%20Topic (the "%20" is a space between each word)
mailto:email@example.com?subject=Email Topic&body=Type Your Message here

Thanks Chris! I think I need an http in there unless I want everyone to read my entire email account lol. Possibly I am doing something wrong?
Using HTTP won't work unless you are linking to a form or something...which you could do. You you create a form within Google Docs/Google Drive and have all submissions to the form come to your e-mail address. Instead of using the "mailto" line that I gave you, you'd use the Google URL of the form...which would hide your e-mail address. If you didn't want to go that route, what we've done at our Technical College is had our IT department create a separate generic account for our department called LMS@SchoolName.edu (where the SchoolName is our school). It's a mailbox that my entire team has access to, and I'm not worried about having my own work e-mail address listed for people to see.
