Changing a fill-in-the-blank to an essay question

I created a quiz and mistakenly crated a short essay question as the wrong question type (fill-in). I didn't realize the mistake until some students had already taken the quiz. I modified the question, and I hoped it would display a larger textbox for the students to enter their short answers, but so far it only gives students one line. But when I myself preview the quiz now, it shows the question as an essay and seems to have a large-enough text-entry box. But I can't be sure the modification has taken effect for future students until another student tries to take the quiz.

But also, the students who already took the quiz when that question was set up as a fill-in, wrote long answers. But only the first line of those answers is displayed as if it was a fill-in-the-blank. Canvas won't let me view thew whole answer -  just the first line. If I click on it, Canvas displays a red circle with a slash. What are my options?
