I'm teaching an online course that I did not design. The point values of the quizzes in this class each exceed 100 points by about 10% (111 points, 109 points, etc). The rationale for this is to create a small buffer given the difficulty of some of the material. The quizzes should be scored out of 100 rather than whatever the actual point total is, so that there about 10 bonus points available on each quiz. For example, if you score 70 out of 111, your grade should still be 70%, rather than 63%.

Since Canvas tallies the points automatically based on the value of each question, I can't find a straightforward way of de-coupling these values. The best solution I've been able to come up with so far is to manually ad "fudge points" to each quiz, though this will be a bit labor intensive. Is there a slicker solution available, by any chance?

You pretty much found the solution with the Fudge Points. You can't decouple the question points from the quiz points, they are actually the same thing.
