A student of mine tried to submit an assignment in .docx format and got this error message:

This is just a guess...but when I look at the red message in your screen shot, it says the accepted file types are "pdf .doc .docx" You'll notice that the first file type, pdf, doesn't have a dot in front of it compared to the other two. So, in my own sandbox course, I tried putting in the following:
When I saved the assignment details, it stripped out the dots in front of the file extensions...leaving pdf, doc, and docx. It displays like this:
But then I tried putting in the file types as a single string of characters (no commas, but there are spaces):
And the result I got was exactly what you shared in your question...the red message.
As you can see from the third screen shot I've posted here, the file extensions separated with a comma (no spaces). So, again, this is just a guess...but take a look at your text box where you are specifying the file types that are acceptable. The list should look something like this: pdf,doc,docx. This should make it so that the acceptable file types display as shown in the second screenshot I've shared above. I also tested this, and I was able to submit a *.docx file using the format I've indicated above.
I will note that the Canvas Guide, How do I create an online assignment?, does indicate that spaces and periods can be used, but in my testing, it didn't seem to be the case. Give my suggestion a try to see if that resolves the issue.
