How do I register my org to be searchable and useable in the Canvas ios and android apps using a custom install and website address?
I don't know if you realized it, but you posted this with a non-deliverable email address. According to RFC 6761, example.com should be reserved for use in documentation and email@example.com is not going to receive any email responses. What probably happened is that you were logged in as that user and then clicked the Help link to get here.
As for your actual question, I can't definitively answer it. I suspect that for institutions that are paying Instructure to host Canvas automatically get their domains listed -- at least that's what happened for us. If you're running your own instance and skirting Instructure, then they're not going to know about you to list you. They might not want to list you, either, since failure to keep your site up-to-date will start to reflect poorly on their product.
In 2011, OCAD university began running the Community Version of Canvas and even presented at InstructureCon2012 about how to do it. So I thought I would check them out as they seemed like experts on it. Their school does not come up in the Mobile App search box - either by OCAD or their full name. Their website has a Canvas FAQ that explains the differences between Community Version and Canvas Cloud. Here's a table from that page.
Notice that they only update their Canvas every 6 months -- which means that bugs can go unsolved for a long time. That's what I meant about out-of-date sites might reflect poorly on Canvas (bugs make for unhappy users).
That page was last updated in September 2016, so I don't know for sure if things are the same or if Mobile support has become available for self-hosted sites. I mention that because Instructure open sourced their mobile apps in November so things may have changed. I imagine though, that self-hosted instances would also be expected to provide their own mobile apps, but I'm really just conjecturing.
That said, I verified earlier this week that you can enter the URL to your instance directly in the box rather than using the autosuggest feature (at least for iOS) [I needed access to our beta site]. If your Canvas instance is canvas.example.com, then you can just type that into the box on the mobile app. You can use this to verify that you can even access your Canvas instance through your mobile app. If not, then getting it listed in the search box is not happening either.
Hopefully someone will have the definitive answer.
We use Canvas hosting and I had to put in a request with our CSM to get us added. As James Jones says, typing in the URL for your institution also works.
Same for us. Didn't come up by name until we requested.
