I have attempted to create a sample ePortfolio in Canvas for use as a model for my students and I do not seem to be allowed to do so.

You should be able to create an ePortfolio as a teacher. These guides are really great, and I hope you find them helpful:

Another way I've helped teachers demonstrate this was to create a Test Student which was enrolled in their course. The Test Student had their own log-in information, but the instructor was able to act as a student, create a portfolio, and then narrate the steps to their class from the exact same perspective as the students. I wonder if your Canvas admin would be willing and able to collaborate with you to establish something similar.
