I have a student with ADA accommodations that require all content to be audible. Is there a setting in Canvas or a way the quizzes can be audible?

Currently that functionality is not available in Canvas, but there are third-party solutions that integrate nicely. One of my schools uses ReadSpeaker which works nicely, and is fairly cheap.
I am also going to recommend to you, and share your question with the Accessibility Group in the Community. Lots of great experience and expertise in there.

Another great resource to explore is WebAIM, which has all kinds of wonderful info on web accessibility and checking content to ensure it's accessible. As someone who isn't a regular user of screen readers but trying to build her familiarity with them, I'll just say that it can be a really disorienting experience to test your site this way. WebAIM is very up-front about that, and I think you'll find that page useful even if you aren't able to devote the time to learning and testing with a screen reader. They provide a good overview of some of basic things we can do to ensure that content is accessible.

This would be a WONDERFUL idea for an LTI!
Read&Write for Chrome might be a good option as well. Webpages like UDL On Campus have a built in text reader. I see this as a real opportunity for webpages.
