Can I make an assignment optional (no points and no grade book entry)?
I believe I have found the answer to keeping assignments from the grade book:

Hi Paul Scott - No points? Yes. Not in the gradebook? I'm afraid not. First things first: any assignment you create can just have an assigned point value of 0 points, but even better, Canvas gives you the option to input a point value and not make it count towards the final grade, as outlined here: How do I exclude an assignment from the course's final grades? Even those, however, will still appear in the Gradebook. There's a good reason for this (I think...) in that the assignment will still allow you to leave comments like any other assignment and use features like the Canvas DocViewer.
There's few things in Canvas that I can think of, off hand, that would allow a student to submit something and not wind up in the gradebook other than perhaps ungraded Discussions and practice Quizzes.
Another possible idea might be to look into Mastery Paths, depending on what your goals are for what you're doing. Again, these would be graded assignments, but are things that give students a bit of choice depending on competency. I am assigning 0 points and not counting the assignment toward the final grade. (is that partially redundant)?
My concern is the length (width) of the grade book and exporting it since my institution doesn't yet allow syncing with our LMS (Desire to Learn).
