Overide "LATE" submission

Hello. In my course, we require students to submit quizzes by a deadline and with a passing score. We give them 2 attempts to achieve a passing score and keep the highest score for our records. The quizzes are set up to show correct answers after the last attempt. We have many quizzes in the course, so allow up to 4 to be submitted late (which we track manually.)

We are running into an issue where students achieve a passing score on their first attempt (and by the deadline). Then, after the deadline, they use their second attempt as practice and/or to see the correct answers. If this happens, the quiz is marked late even though the first submission was done on time.

Is there any way to override the "LATE" grade or choose which attempt gets recorded in the grade book on a student by student basis?
