I am brand spanking new to all of this...I would like to grade writing on a 4 point scale. In addition, I want to "weight" this assignment by 5. Essentially I want a potential 4 point score = 20 possible points. Can I do that? Pls advise..Thank you.

Welcome to the worldwide Canvas Community! It sounds like you just want to grade from a basic five-criterion rubric if I'm understanding your question correctly. A bit like this sample one that I just created as a quick example:
