Does anyone know how to unpublish many items all at one time?
Hi Jennifer McCue Welcome to the worldwide Canvas Community! The respective so-called "index" pages of the type of material you want to unpublish is the place where this can be (relatively) easily done. However, bear in mind that if there have been any student submissions to something like an online assignment or a discussion, it cannot be unpublished.
With that caveat, there is an overview of the Assignment index page here, which is one place to start. On that page, any published assignments will have a green cloud icon over on the far right. Simply click the green cloud icon and it will turn gray, meaning it is unpublished. So yes, there may be multiple mouse clicks involved, but it's pretty simple. A similar procedure is on the Discussions index page.
As for Files, you can select multiple files by selecting the first one and then holding down the Ctrl key (Command on a Mac) and then clicking the other files you want to unpublish. Once you have selected the files, a toolbar will appear that is illustrated under the Manage Selected Files heading on this page: How do I use Files as an instructor? Click the icon for "Manage Access" (number 2 on the illustration there) and you can do a mass unpublish of multiple files at once.

Ken Black has given you a bunch of great information here! I wanted to also mention that there is a document here in the Community written by James Jones called Bulk Publish / Delete Pages which utilizes Google Spreadsheets. So, if you are interested in an alternative way to do this, you might want to check out his write-up. It's pretty neat.
Along with this you can unpublish all or specific assignments pretty quick using the Adjust All Assignment Dates on One Page spreadsheet. There's a column for publish/unpublish and you mark everything to 0 for unpublish if I remember correctly.
And my favorite way to unpublish several things at once is to put them in the same module and just unpublish the module. This will get the included content pages, assignments, quizzes, and discussions all with one go without having to go to separate Index screens. Plus you can keep related assets together.
